I'm not sure what you mean as you can still connect a physical server to a UPS and have the UPS management for ESXi Hosts, e.g. APC Powerchute. The problem you have is that because your Hosts are in a HA cluster, there is no way now in 5.1 to gracefully shutdown VMs when a Host shutdown is initiated.
